Hunter’s chicken


125ml olive oil

1 chicken, cut into pieces

2 onions, cut into large pieces

2 red peppers, sliced

1 tin crushed tomatoes

1 tin olives stuffed with pimiento

250ml white wine

2 bay leaves

salt and pepper to taste


In a medium pan, brown the chicken in the olive oil

Add the onions and peppers and saute ’til lightly browned

Add the tomatoes, olives and bay leaves

Add salt and pepper to taste and simmer for 20 mins.

Serve with rice
