Makes one to one-and-a-half jars
100g (4oz.) butter
225g (8oz.) sugar
175ml. (6fl. oz.) lemon juice
Grated zest of 3 large lemons
1. Put the butter, sugar, juice and zest into a large bowl. Cook uncovered at full power in a microwave for 3 mins., stirring halfway through.
2. Beat the eggs in a jug and slowly whisk them into the mixture. Cook for a further 5 mins. or until the mixture thickens., checking a nd stirring every minute.
3. Allow to cool a bit, stirring every now and then, before spooning into jars.
Keep in the fridge and eat within 6 weeks.
