Lemon Sponge Cake

INGREDIENTS

400g sugar

450g flour

225ml milk

100ml olive oil

6 eggs, separated

1tsp vanilla extract

baking powder

lemon zest

METHOD

Beat the egg whites and sugar together. Add the egg yolks and the rest of the ingredients. Pour into a 22cm x 30cm greased and floured pan.

Sprinkle the top with cinnamon and sugar.

Bake at 180C for 40 mins.
