Minestrone soup


1 onion (peeled and thinly sliced)

1 clove garlic (crushed)

1 carrot (peeled and finely sliced)1 turnip (peeled and diced)

1 leek (trimmed and sliced)

1 stick of celery (sliced)

200g tomatoes (skinned and chopped)

50g macaroni

1.2l meat stock

a little shredded cabbage

a few flat green beans (sliced)

Black pepper

Grated parmesan cheese


1. In a large saucepan put the onions, garlic, carrot, turnip, leek, celery and tomatoes with the pasta and stock. If using a stock cube, you won’t need to add any more salt but do add some black pepper to taste.

2. Bring to the boil and simmer for 25 – 30 mins. until all is tender.

3. Add the cabbage and beans and cook for a further 10 mins.

4. Test for seasoning then serve hot, sprinkled with a little grated Parmesan cheese.
