Spanish roast potatoes

INGREDIENTS:

1-1?4lb roasting potatoes, peeled and cut into even pieces

3 Tbsp. Virgin olive oil

1tsp. garlic powder or 2 cloves crushed

1tsp. ground cumin

1tsp. smoked paprika

1?4 tsp. cayenne pepper or hot paprika

1tsp. cinnamon

Salt to taste

METHOD:

Preheat an oven to 400 F. Place the potatoes into an oven tray with the oil, spices and a generous pinch of salt. Toss them in the ingredients so that they are well coated. Place the potatoes in the center of the oven and roast them for 60 minutes — turning them at regular intervals, so that all sides are crispy. When they are crisp and a dark golden brown and soft inside they are ready to serve.
