A great tapas dish –
100g tin of anchovy fillets, drained
1 small red onion, peeled and very finely chopped
1 small bunch of fresh flat-leafed parsley, roughly chopped
1 tbsp capers, rinsed and roughly chopped
1 tbsp red wine vinegar
4 tbsps extra virgin olive oil
Place the drained anchovies flat on a serving plate. Put the onion, parsley and capers in a small bowl, add the vinegar and olive oil and stir to combine.
Pour this marinade over the anchovies and leave to marinate for at least 30 mins. or up to 48 hrs.
